Hey guys! Happy Friday to all of you 🙂 ❤ When I woke up this morning, I knew that I wanted to share a Little Accomplishments-style post on my blog at some point today, because I love having a mini weekend celebration in this fashion … but then I realized …

I didn’t get much done last week!

I was rather disappointed, haha, but I also understood. My family and I have all been on the edge of our seats lately, as there were two different evenings we were sure my mom was going into labor, but then they didn’t end up being the real thing. I don’t mind that, and it was my fault I didn’t get my to do list in order sooner, haha. It was a bit of an off-week productively, but I’m not worried about it – it just gives me further ideas for the new week!

How about you? Did you get lots done this past week, or was your to do list in hibernation, too? I hope that whatever you did, you are happy that the weekend is here now. I certainly am! I intend on setting stronger goals for myself over the next seven days or so (as you’ll see below), which is why I wanted to do a reverse Little Accomplishments today. lol Instead of listing what I did, I’m listing what I’ll do!

Little To Do List

Over the next week, I plan to …

  • finish reading ‘The Virginian.’ I meant to have finished it already, but then about a quarter of the way through the book, I met a few boring chapters, and it slowed my progress immensely, lol. Now that I’ve made it past that part, I’m back to laughing over the antics of the main character, how the narrator perceives them, and the friendships the Virginian shares with many of the other cowboys he meets out west. I’m about a week behind now on reading a book a week, but I know I’ll catch up at some point on this year’s reading journey.

  • continue practicing writing with my new markers. With the Amazon gift card my parents gave me for Christmas, I bought some Crayola dual fine/brush tip markers for mysef, where one end of each marker has a tiny tip, and the other is a brush tip in a similar color. One is good for detail coloring, which I’ve been enjoying doing in my new coloring book, and the other is awesome for practicing calligraphy – something I’ve always wanted to do! When I make good progress with that, I’ll share some of what I’ve written with you guys.

  • start reading ‘Hank and Jim.’ This book ended up taking forever for me to get from the library, haha, because it kept being checked out!! It’s this awesome biography written about the friendship between Henry Fonda and Jimmy Stewart, two actors whom I greatly admire. Hopefully, the novel will live up to all my expectations (which are only there in the first place because it took me over a month to get the book for myself, haha!), and I’ll let you know how I liked it in my next reading update post.

  • clean my phone. I’ve been meaning to do this for about a week now lol, and all it consists of is cleaning the exterior, then going through apps and photos. Come on, Maggie! Get it done!
  • bake and cook more. This to-do will actually something I must-do after my baby sister’s born, haha, because then my mom won’t have to stand as much and work in the kitchen and can instead take it easy after giving birth. As well as fixing dinners, I hope to make a dessert hopefully once a week. I made chocolate brownies on a whim this morning, and I am happy to say that they turned out great!
  • continue studying the Lord’s Word. Something like this probably isn’t necessary to include on my list of things to do, because I automatically do it throughout the day, anyway. Still, I did want to include it to even more deeply remind myself to pay attention to what He’s teaching me, because I never cease to learn something new every time I’m open to the beauty and wisdom the His Word contains. ❤
  • write more of what the Lord’s teaching me. As you saw in yesterday’s post, this is something I plan on doing as often as possible now. With the new notebook my dad bought for me, I can’t wait to get started!

  • play more games with Samuel. With so much attention being given to Elizabeth and my mom, and pretty soon the new baby, too, I want to make sure that Samuel never feels left behind. He’s still a little kid, and I am now making a greater effort to include him in things I’m doing, whether that’s a game, a conversation, or a new recipe I’m trying out. He enjoyed playing out in the snow the last couple of days (it was the most snow he’s ever gotten to experience, actually!), as you can see in the photo below. So, whether we’re outside or we’re playing a game inside, I want him to look at me as his friend and sister, not just his eldest sibling. ❤

  • enjoy the rest of January. I tend to not realize how easily we speed through a month until we’re suddenly in the last week of the month! Thankfully, that hasn’t happened to this month yet. However, this tendency shows how much I’m thinking too much about the future and reaching goals, instead of living in the present. We’re just over halfway through January now, and I intend on enjoying and savoring the last half. ❤

Simple Apple Crumble

Simple Apple Crumble

Hi guys! I hope that you’re all having a beautiful Saturday. 🙂 ❤ Today, I have a delicious fall treat to share with you! Upon my mom’s suggestion (and when I realized that baking my first apple pie was too daring for this year, lol), I found a wonderful, easy recipe for apple crumble!

You can check out the original recipe here. I halved my batch, as I didn’t feel like cutting and peeling eight apples lol, and it provided a nice dessert for me and my family after dinner one evening!

Simple Apple Crumble

These are the ingredients that I used (all of which we had on hand, which is awesome!):

Once I was done cutting up and peeling the apples, I folded them into a sugary/cinnamony mixture and arranged them in a glass baking dish (see below).

Next, you make the oats mixture, which was easily done, and I spread it evenly on top of the apples.

The next step was to bake it! This was a simple ordeal, and I just took it out when the apples were golden.

Once it had cooled some, I served some into a dish and took some pictures:

{Final Verdict}

Me and my family really enjoyed it! Even baby Elizabeth liked it, which was awesome; I cut up tiny little pieces for her to have, and it was so cute watching her come back for more! I really liked the flavor of the apples, cinnamon, and oats combined, and the only thing I would do differently next time is add a stronger spice flavor. It had a very light flavor (like most apple desserts do), and I’m positive this could be improved upon by adding some more spice.

My Advice: Experiment with cinnamon and other dessert spices!


I hope that you all enjoyed this little recipe post! This was the perfect dessert to make using our apple orchard apples, and I will happily make this again sometime. ❤

Fall Harvest Chex Mix!

Fall Harvest Chex Mix!

Hi there, guys! I hope that you’re all having a beautiful day. 🙂 ❤ I have an amazingly delicious treat to share with you today!! It was a breeze to make, a big hit for my whole family, and because I made a half-batch, I have enough to make more, haha! This treat/snack is called fall harvest chex mix!

I got the original recipe here! Like I said, I halved the recipe, and I also omitted the Bugles. Everything else stayed the same, and the directions were very easy to follow.

Let’s jump right into this!

Fall Harvest Chex Mix

The ingredients I used are below:

Fun fact: I over-eagerly dumped the wrong ingredients together in a bowl, so Joshua and I had to separate the rice chex out by hand. lol

Once the candy was in one bowl and the rice chex and pretzels were in another, this is how they looked!

I made the glaze that went with the rice chex and pretzels, then poured it over them and slowly mixed it until they were covered evenly. This was very easy, as well, and I was happy with how the texture of the glaze turned out. The other times when I’ve worked with a warm sauce/glaze that has to be whisked until it reaches a certain texture has been hard for me, but this recipe made it simple!

There isn’t much of a visible difference, except you can see that they’re a little bit shiny, haha!

The next part reminded me of when I made the candied pecans recipe for the first time back in February; you spread the food out into an even layer on the baking sheet, then bake for 45 minutes, stirring them every 15. This was my first time using parchment paper in baking, actually, and it worked very well!

Once they had cooled, I was then able to pour them in with the candy ready in the other bowl. I had done it prematurely earlier in the day (lol), but now was the time for them to make a delicious snack combo!

Sorry about the overexposure on the picture above; sometimes, the metallic siding of the mixing bowl I usually use will make my phone’s camera think I’m pointing at DIRECT SUNLIGHT, and everything gets white and fuzzy. Haha! I kept having to manually bring down the exposure because the camera wouldn’t pick up the room’s lighting correctly.

Once I had transferred this treat to the glass container I was going to keep it in, I brought out the festive props and took some more pictures.

I have never been more happy with how a still-life photoshoot turned out!!! All of the fall vibes are killing me hahaha

{Final Verdict}

This Fall Harvest Chex Mix is the best treat I’ve made in a while! However, I do have a few complaints. (Nothing big; just things I’ll change or do differently next time.) The main one is that the candy pumpkins were hard to eat – me and my whole family much preferred the candy corn, which tastes exactly the same! Next time, I’ll do more candy corn and omit the pumpkins, even though they are very cute and picture-worthy.

My only other issue was that it was hard to get a nice handful of the snack that included pieces of all the different candy and pretzels/rice chex because the heavier items (mainly the Reese’s Pieces) fell down to the bottom of the glass container. I might have to store them differently next time so that eating this treat is easier!

Apple Coffee Cake Muffins!

Apple Coffee Cake Muffins!

Hey there, guys! Hope you’re having a beautiful week so far. 🙂 I have an epic fall recipe to share with you today!! Apple and pumpkin desserts are my weakness, haha, and they are especially fun to eat in the fall. (However, I’ll gladly have them any time!)

During one of my many Pinterest browsing sessions, I came across a wonderful recipe for apple coffee cake muffins, as you saw by the title! They were a joy to make, turned out great, and I’ll definitely make them again at some point!

The only thing I changed was the amount of time I baked them; I used my mom’s convection oven (as you’ll see in one of the pictures below), and I set it at the temperature the recipe gave me, then watched them until they were baked all the way through.

Let’s jump right into this!


Apple Coffee Cake Muffins

These are the ingredients that I used for my batch:

Once I had finished cleaning, peeling, and cutting up the two Gala apples, I mixed everything together for the crumb topping. It was super simple; you just stir the dry ingredients, then add the melted butter.

Setting that aside, I tackled the dough! It was also pretty basic, nothing exciting lol; just the dry ingredients in the big bowl, the wet ingredients in a small bowl, then you mix them together.

The one thing I struggle with when making muffins is transferring the batter to the little paper muffin cups. *sighs* This was actually the easiest time yet, but I still don’t enjoy it very much, lol!

My mom helped me make the glaze once the muffins had completely cooled, as my glaze-making history is rather poor, haha! (I’ve been known to add too much milk, fail to sift the powdered sugar enough, etc … ) I did my best to drizzle the glaze evenly, and once that was done, I took some pictures.

{Final Verdict}

They were very good! The cinnamon flavor really did remind me of my mom’s coffee cake, which I absolutely love. However … the muffins turned out dry, and the apple flavor was very mild. To cook them all the way through in the convection oven, it ended up sucking all the moisture out of them. If I make them again, I will bake them in our regular oven, and maybe add some spices to compliment the light apple flavor, as well! This is definitely one of those treats best warmed up and served with coffee, and I also think that apple cider would make a wonderful addition to them, as well! ❤

Hi guys! I hope that you’re all having a beautiful Thursday. ❤

For this week’s tasty treat (this is the first time in months that I’ve gotten treats posted two weeks in a row, woot woot!), I have a very tasty recipe for twelve simple blueberry muffins!

This post is dedicated to Angela from lifeofangela, as she’s the reason I found out about this awesome recipe! She posted her batch of them last week, and as I had already been wanting to make blueberry muffins for a while, this was the boost I needed to finally make them!! haha

Are you guys ready to learn how to make these wonderful muffins? Make sure to check out the original recipe (I followed everything, just converted Celsius to Fahrenheit haha). Let’s get into this!

Blueberry Muffins

Here are the ingredients that you will need:

I mixed all of the dry ingredients into a large bowl, and the wet ingredients into a small bowl:

Then I mixed them all together in the large bowl, making sure not to squish the blueberries too much:

Next, I poured them into the cupcake liners and dotted all of the tops with a few extra blueberries:

Then, last but not least, you bake them! (Look at how tiny they look in this picture, haha)

Because I’m still quite new to baking, I haven’t learned a good technique on pouring batter into muffin tins or cupcake liners yet … so the edges of the muffins didn’t turn out as pretty as I would have liked, haha. However, I still attempted to make them look alright!

Fruit Salsa and Cinnamon Chips!

Fruit Salsa and Cinnamon Chips!

Hello everyone, and welcome back to your (usually) bi-weekly dose of my tasty treats!

This particular dessert was quite a large project – definitely the biggest one I’ve done so far.

A few weeks ago, I was browsing Pinterest. I always seem to be doing this, haha, but that day, I was looking for something different; I was searching for summer-y recipes to try out and make throughout the summer, and what I’m sharing in this post is the first one that I fell in love with!

It’s such a unique idea, and the homemade chips that went with it are absolutely amazing, too!

Today, I am happy to introduce to you fruit salsa and cinnamon chips!

Fruit Salsa

This picture-worthy appetizer treat is made from a nice blend of different fresh fruits. It also has some fruit preserves thrown in to add a more salsa-like texture and appearance. It was definitely time-consuming with all the different fruits I had to chop up (thankfully, my brother volunteered to help out with some of that!), but the turnout was worth it.

Before I go on, I’d like to tell you guys that this is a great treat idea for a big party, but making the whole batch was a mistake. I ended up throwing most of it away, unfortunately. 😦 There was so much, and my family and I couldn’t eat it in time. So, while I probably won’t make it again (except maybe for a party), I am for sure making the cinnamon chips that went with it! I’ll talk about those in a minute. Alright, back to the fruit salsa.

First, you gather all your fruits together.

I used a dalia melon, two granny smith apples, and a lemon. Next up, we have:

Raspberry preserves (that’s what the original recipe creator used, so I did the same!), as well as strawberries and raspberries.

I cut up the apples, salvaged as much of the melon as I could (ahaha I was quite the amateur fruit slicer), grated the lemon, opted to use some lemon juice from the fridge instead of juicing the lemon I had just zested (I don’t like pulp), cut up the strawberries into very small pieces, then mixed everything (including the preserves) together in a huge bowl! Here are some pictures from that process.

Cinnamon Chips

I never thought that I would make my own tortilla chips one day – much less cinnamon-sugar ones! However, I am so happy that I got to make these. They were extremely simple, quick to bake, and sooooo good!

All you need are some flour tortillas (any size will do), sugar, cinnamon, cooking spray, and a baking sheet and foil.

Spray both sides of the tortillas with cooking spray, then sprinkle the sugar/cinnamon mixture on both sides. Once you’ve done this with as many as you’d like (I used four fajita-size tortillas), stack them together on the baking sheet and use whatever you’d like to cut them (I used a pizza cutter) into the desired triangular shape. (You can make them big or small; it’s just preference!)

Next, you arrange them in a single-layer on the baking sheet and bake for about ten minutes.

I loooove how these turned out!! The salsa was quite a commitment, so I know that most people wouldn’t be up for concocting that (haha), but guys. Please do give these cinnamon chips a chance. They’re super easy, and they make for a light treat!

Vanilla Dump Cake!

Vanilla Dump Cake!

Helloooo everyone! Happy Thursday to all of you! And a hearty welcome back to your bi-weekly does of my tasty treats. ❤

Today, I have a dessert so simple to make that my mom came up to me one late afternoon, asked “Do you want to make a cake?” and she and I had it baked and frosted before dinner was on the table. (Alright, I take that back; she frosted it right after dinner. Details, details.) This vanilla dump cake is delicious, super quick, and such an easy treat to fix!

If you have the ingredients listed below, an electric mixer, measuring spoons and a few mixing bowls, then you’re good to go. ❤

I’m going to share the recipe for the cake and the frosting, since they’re both so short, then I’ll post a few pictures of my experience with making it! (Special thanks to my mom for her baking and photography help. ❤ )

Vanilla Dump Cake

Ingredients:

1-3/4 (and an 1/8) cup flour

1-1/2 cups sugar

1 cup margarine

1 1/8 cup milk

2-1/4 tsp baking powder

1-1/2 tsp vanilla

3/4 tsp salt

1-1/2 eggs

Vanilla Icing

Ingredients:

1/2 cup butter

2-1/2 cups powdered sugar

1 1/2 Tbsp milk

1 tsp vanilla

Instructions {Cake}:

1. Preheat oven to 350F. Spray a 13 x 9 glass baking dish with cooking spray. Set aside.

2. In a large bowl, beat all ingredients together with an electric mixer on medium speed, scraping bowl occasionally, until well blended.

3. Pour into the prepared glass baking dish.

4. Bake for about 40 or until golden brown and a knife inserted comes out clean.

(Time and done-ness varies depending on what pan/dish you use!)

Instructions {Frosting}:

1. Cream butter in medium mixing bowl, then add vanilla.

2. Add powdered sugar one cup at a time, beating on medium speed.

3. Add milk; beat on high until completely blended.

4. Spread evenly over warm cake!

Thank you so much for reading, guys! There are few treats I like more than a basic vanilla cake – and this one is so easy to make. My mom has actually been baking this one for years, and I’ve always loved the thick frosting, the moist cake, and while I think it’s very good with strawberries on top, it is also fantastic on its own!
